About this item
Long, segmented shellfish whose colour runs from pale coral to deep violet along the shell. The meat is sweeter and a little denser than an ordinary prawn, and it holds its shape well whether steamed, fried or grilled over coals. Split the shell along the back and the whole tail lifts out in one piece, leaving nothing behind but the shell. Handle the sharp tail spike with care, and eat them while they are still hot.
